For the Pudding Filling
In a small bowl, dissolve cornstarch and sugar in about 50ml cold milk. Add egg yolks and mix well.
Heat the remaining milk in a pot, but do not let it boil.
Gradually add the cornstarch-egg yolk mixture to the warm milk while stirring constantly.
Continue stirring until the mixture thickens to a pudding-like consistency.
Remove the pot from the heat and stir in the butter and vanilla extract until well combined.
Allow the pudding filling to cool before using.
For the Dough
Dissolve the yeast in lukewarm milk and let it rest for 10 minutes.
Sift flour into a bowl and create a well in the center.
Add egg, sugar, salt, soft butter, vanilla extract, and dissolved yeast to the well.
Knead everything into a smooth dough, about 13 minutes, until elastic and no longer sticking to the bowl.
Cover the dough and let it rise in a warm place for about 1 hour, until doubled in size.
Knead the dough briefly again and divide into 6 equal pieces.
Shape each piece into a ball and let it relax for another 15 minutes.
Roll out the dough balls, make 4 cuts (not all the way to the center).
Place pudding in the center and arrange thin apple slices around the filling.
Fold the dough alternately around the filling to form a „blossom,“ placing thin apple slices in between the dough.
Brush with egg yolk-cream mixture.
Bake at 170°C convection for about 20-25 minutes, until golden brown.
Allow to cool briefly and brush with maple syrup.
